Pears are not much good for pickling and positively bad for chutney but they make good pies. As noted, Carême advocated glazing them à la Anglaise as we have glazed our peaches. It is a good option. The Editor, however, seldom gilds good ripe pears. Instead, they get sprinkles of allspice and ground ginger. Otherwise bake pear pies according to the instructions for peaches.
