Mackerel cooked a traditional way, with cider.

4 Servings


-4 mackerel fillets
-unsalted butter
-4 bay leaves
-cracked black pepper
-about cup hard cider



Preheat oven to 350

1. Set a bay leaf on each fillet, lace the fish with cracked pepper and roll each fillet around its bay leaf.

2. Dribble the cider over the fillets and bake them until just cooked through, 15-20 minutes.
