Another winter fool

PlumsIt was inevitable that bfia would become self-referential as we increase the number of our recipes, essays and other features. This recipe combines two others, whisky prunes and winter fools, in a wintertime prune fool.

-about 6 oz whisky prunes
-a little water
-½ teaspoon lemon juice
-1 cup heavy whipping cream
-¼ teaspoon sugar

  1. Chop the prunes, or pulse them in a food processor, with only enough water to prevent their scorching, just until the alcohol evaporates, then stir in the lemon juice.
  2. Let the prunes cool.
  3. Whip the cream with the sugar until it just begins to stiffen, then fold in the prunes.
  4. Spoon the fool into four glasses, chill and serve.

Note: If you like a boozier taste, do not bother heating the whisky prunes.
