Another winter fool
It was inevitable that bfia would become self-referential as we increase the number of our recipes, essays and other features. This recipe combines two others, whisky prunes and winter fools, in a wintertime prune fool.
-about 6 oz whisky prunes
-a little water
-½ teaspoon lemon juice
-1 cup heavy whipping cream
-¼ teaspoon sugar
- Chop the prunes, or pulse them in a food processor, with only enough water to prevent their scorching, just until the alcohol evaporates, then stir in the lemon juice.
- Let the prunes cool.
- Whip the cream with the sugar until it just begins to stiffen, then fold in the prunes.
- Spoon the fool into four glasses, chill and serve.
Note: If you like a boozier taste, do not bother heating the whisky prunes.
