Eliza Acton

Elizabeth David has called Mrs. Acton the most humane of all English cookery writers and if that is a distinct exaggeration, the writing is nonetheless spritely, the recipes clear and David is right that Mrs. Beeton stole material from Mrs. Acton shamelessly (if, as David fails to note, openly too).
