Pumpkin time

Jack O' LanternWe like a jack o’ lantern but not waste so we always cook ours after Halloween if the squirrels have not scarred it first. You can roast the seeds for a salty snack too. In reality canned pumpkin is indistinguishable from a puree of the fresh stuff but some recipes chunk it into soups and stews or roast it, so you get to try something new with jack if you like.

Seventeenth century settlers found pumpkin, or ‘pompion,’ among the other squashes cultivated by the natives in New England and despite their early suspicion of many American foodstuffs adapted it and of course corn with remarkable alacrity to traditional English foodways.
