Pea powder

peas001.png The ‘pea powder’ that Dr. Kitchiner intended for seasoning pea soup or pudding also is handy enough for seasoning cooked greens, and in particular lettuces, or dishes that include them.

Just mix together one part each of dried mint and sage to a quarter part of celery seed along with a pinch of the ubiquitous cayenne. Dr. Kitchiner ‘observes’ that “Allspice, or Black Pepper, may be pounded with the above, as an addition, or instead of the cayenne” in amount an eighth as much as the mint and sage.
