Mrs. Lane’s orange fool from 1909

Mrs. Lane’s orange fool from 1909 is more custard than fool, which neither includes egg nor requires cooking, and after all Mrs. Lane does tell her reader to “serve in custard cups.” Either way hers is a distinctively English dessert that would find itself at home in a cookbook from the eighteenth century. “Mix the juice of 3 oranges, 3 beaten eggs, 1 pint of sweet cream, a little nutmeg and cinnamon and sugar to taste. Set the whole in a double boiler and stir until thick; when cold serve in custard cups.” (Lane 37)
