Canape Windsor

Rosie Sykes claims her ‘Croute Windsor is this, but the Robin McDouall canapé is not much of a precursor. That is not to say it is not good: It is, but McDouall, ever the minimalist, takes a total of three ingredients while Sykes selects seven. A single canapé.

His ‘recipe’ in full:

“‘2 oz of ham minced very fine. Add a little port and double cream. Place one large grilled mushroom on top of the ham.

            Serve hot.’”

Notes:

-From McDuoall’s Clubland Cooking.

-The scrupulous McDouall gives credit where due and attributes the canapé to White’s rather than claiming for his own or his club. He was the flambouyant secretary of the Travellers for several decades after the Second World War
