This sweeter variation is very different but equally good.
-4 Tablespoons cold unsalted butter
-1 Tablespoon chopped parsley
-2 mint leaves, chopped or torn
-2 fresh sage leaves, chopped or torn
-a little salt
-a leaf of dark green lettuce or spinach (optional: mostly for color)
Whiz all of the ingredients in a processor just until the color is consistent and the consistency is smooth, but do not overprocess or the butter will separate.
